You buy or collect raw animal material, cook it, and separate it into three saleable streams: fat (tallow, lard or poultry fat), protein meal (meat-and-bone meal or feather meal), and, where relevant, hides or other by-products. How the process converts input into revenue

The physical process is worth understanding because every step is a cost and a yield point. Raw material is collected and, in a well-run plant, size-reduced before cooking. Cooking, wet or dry rendering, drives off moisture and frees the fat from the protein and bone. The cooked mass is then pressed or, more commonly at scale, separated in a decanter centrifuge into three phases: fat, solids (which become protein meal) and water. The fat is polished and, where food-grade, refined; the solids are dried and milled into meal; the high-strength effluent is treated. Energy is the dominant variable operating cost because cooking and drying are heat-intensive, which is why gas or steam pricing feeds directly into your margin and why some operators burn a portion of their own tallow as boiler fuel where regulations allow.

A note on volatility: because the biofuel bid sets a floor and the food-grade market sets a ceiling, your realised price in any given quarter can swing by 20% or more. The Fastmarkets assessments show exactly this, with US Gulf tallow climbing from the mid-50s cents per pound in early 2025 to the high-80s by mid-2026. A forecast that assumes a single flat price for five years is not credible. Build the model around a base, upside and downside price path, size your debt service against the downside, and show the lender you have thought about the cycle rather than hoping it away.

Two revenue levers separate a mediocre plan from a fundable one. The first is grade mix: the flexibility to send fat into food, oleochemical or biofuel channels depending on which pays best in a given month is worth real money, and buyers with long-term rendering contracts hold a procurement advantage. United States

Why the category rules decide your business model. If your raw material is Category 3, you can pursue food-grade and feed markets. If you take Category 1 or 2 material, your legal outlets narrow, often to biofuel and incineration, no matter how clean your process is. Founders who sign supply deals before checking the category of the material they are buying frequently discover they have built a plant that cannot legally sell into the market they modelled. One further point often missed: traceability documentation travels with the material. Commercial documents, the ABP category, and the approved-establishment number of every party in the chain must be recorded and retained. Mistakes That Sink the Plan

Across the plans we have reviewed for processing and manufacturing founders, the same handful of errors recur. Each one is easy to fix on paper and expensive to fix once the plant is built.

  • Modelling a food business when the money is commodity. If 60–90% of your revenue will come from biofuel or oleochemical feedstock, do not write a boutique food plan. The lender will see through it and, worse, you will build the wrong plant.
  • Ignoring the ABP category of your input. Category 1 or 2 material cannot enter food or feed channels. Signing raw-material contracts before confirming category is the fastest route to an unsellable output.

  • Treating tallow price as stable. It tracks renewable-diesel policy and moved to record highs of 89–90 cents per pound in 2026. Model a downside case where the biofuel premium compresses.
  • No secured raw-material supply. A rendering plant with no signed feedstock agreement from abattoirs, butchers or food manufacturers is a machine with nothing to eat. Lenders want the supply contract before the equipment invoice.
  • Forgetting by-product revenue. Protein meal and hides are income, not disposal cost. Plans that miss this understate the business and its debt-service capacity.

Fixing these is mostly a matter of sequencing: confirm category, secure supply, size equipment to realistic yield, budget compliance in full, and model price volatility honestly. A plan that does those five things in order is already ahead of most of the field.
