Mangold, Mangel-Wurzel & the Fodder Beet Market

Before a single figure goes into a plan, it helps to be precise about what a mangold actually is, because the name confuses buyers, lenders and even some agronomists. Mangold, mangel-wurzel, mangelwurzel and fodder beet are four names for one crop: Beta vulgaris grown for its large swollen root. The word is German - Mangold for the leaf and Wurzel for the root - and the plant is a close cousin of both sugar beet and Swiss chard. Roots commonly weigh 5 to 10 lb and can top 10 kg, which is why a good crop looks less like a vegetable field and more like a wall of half-buried rugby balls by October.

This crop has fed livestock since the eighteenth century, and that history matters commercially because it tells you the demand is durable rather than faddish. What has changed is why farmers plant it. In the United Kingdom, where mangold has its deepest agronomic roots, the animal feed market is worth about £5.43 billion ($5,432 million) in 2025, projected to reach £6.12 billion by 2030 at a 2.40% CAGR on 14.71 million tonnes of volume, per GII Research / Knowledge Sourcing, 2025. Tight forage stocks and firm livestock margins keep compound-feed demand elevated, and that is the tailwind behind the fodder beet revival: when bought-in feed is dear, a crop you grow yourself at a fraction of the cost looks very attractive.

Notice the last two numbers, because they are the whole argument. Fodder beet is the highest-yielding forage crop grown in the UK, producing more than 80 tonnes of fresh weight per hectare and pushing towards 100 tonnes for the strongest varieties, with dry-matter yields north of 18 tonnes per hectare from consistent performers such as Robbos and Blaze (Farmers Weekly, 2025). At the same time it can be grown for as little as 5 to 6.5p per kg of dry matter. Most guides on this crop stop at the yield; the number that actually drives the business is the cost per kilogram of dry matter, and a plan that leads with it will read very differently to a lender than one that quotes tonnes per acre and hopes for the best.

There is one more structural feature of this market a plan should acknowledge: demand for the crop is counter-cyclical with feed prices. When compound feed and grass silage are cheap, the economic gap that makes beet attractive narrows, and marginal growers drop out. When bought-in feed spikes - as it did through the input-price shocks of recent years - the beet acreage climbs because home-grown energy suddenly looks like insurance rather than a hobby. A lender will want to see that you understand this cycle and have costed the enterprise to stand up even in a soft-feed-price year, not just when the spread is at its widest. What livestock eats mangold, and how much?

Cattle, sheep, pigs, horses and poultry have all been fed mangold for more than two hundred years. In practice today it is out-wintered beef and dairy cattle and finishing lambs that consume the bulk of the crop. Mature cattle are usually capped at 20 to 30 kg of fresh roots per head per day to protect rumen health. That intake limit is not trivia - it sets your stocking rate and therefore how many animals a hectare of beet can carry.

How is mangold harvested and stored?

You have two operating models. In a lifted system, roots are harvested in autumn with a self-propelled or trailed beet harvester (or a contractor) and clamped under straw at roughly 0 to 4°C and 90 to 95% humidity, where they keep for up to six months. In a grazed system, the crop stays in the ground and cattle or sheep strip-graze it in situ behind an electric fence, which removes the lifting and storage cost entirely. Can you make money from mangold, or is it just home feed?

Both. The most common return is feed-cost avoidance - replacing bought-in concentrates and grass silage with a crop that costs a fraction as much per unit of energy. But there is a genuine cash market too: livestock farmers buy standing beet by the acre from arable neighbours, and AD operators contract energy beet as a feedstock. A serious plan quantifies at least one of these routes rather than hand-waving at "sell the surplus."

What It Costs to Establish the Crop

A commercial mangold enterprise typically needs $60,000 to $280,000 in the United States, or £45,000 to £210,000 in the UK, to get established. The wide band reflects one decision above all others: whether you own machinery or hire a contractor. Beet demands specialist establishment (a precision drill) and specialist harvesting (a beet lifter), and both are expensive to own but cheap to rent by the hectare. A grower who contracts every field operation can start near the bottom of the range; one buying a used harvester and building clamp storage sits near the top.

The single most important costing habit is to convert everything to a per-hectare and then a per-tonne basis. Cash-flow warning most first-time growers miss: beet spends all its costs in spring and summer and returns nothing until the crop is grazed or lifted from October onward. For a business plan, the practical point is that variety choice cascades into everything else: a low-DM grazing variety like Brigadier lets you skip a harvester and clamp entirely, cutting six figures off the machinery line, while a storable variety like Robbos supports a lifted supply chain to buyers who want beet delivered through the winter. Three Ways a Mangold Crop Pays

Fodder beet is unusual among farm enterprises because its most valuable output is often a cost that never happens. That makes the revenue section the part of a mangold plan most likely to be written badly, so it is worth laying out all three routes explicitly.

1. Feed-cost avoidance (the biggest, quietest return)

When you graze or feed your own beet, the "revenue" is the bought-in feed you no longer buy. Fodder beet produced at 5 to 6.5p per kg of dry matter replaces grass silage and concentrates that cost 12 to 18p per kg DM or more. On a crop yielding 18 tonnes of utilised dry matter per hectare, that spread is worth well over £2,000 per hectare in avoided feed spend - before you count the animal-performance gains from a high-energy diet. A plan should model this as a line in the livestock enterprise's feed budget, not as farm-gate sales, because that is how a lender assessing the whole business will read it.

2. Standing or lifted cash crop

Arable growers with no stock of their own sell beet to livestock neighbours, either as a standing crop the buyer lifts or grazes themselves, or as lifted roots delivered by the tonne. Against a growing cost of about £16 to £18 per tonne, a standing-crop sale typically nets a 9 to 20% margin once lifting and haulage are accounted for. The attraction here is simplicity: no animals, no winter labour, and a buyer who often contracts before the crop is even drilled.

3. Anaerobic-digestion (biogas) feedstock

Beet's high, readily fermentable sugar content makes it a strong AD feedstock. Sugar and energy beet deliver a specific methane yield around 0.38 m³ of methane per kg of volatile solids, equivalent to roughly 53 MWh of gross energy per hectare per year. Growers near an AD plant can contract energy-beet varieties as a co-feedstock alongside maize, giving a third market that is insulated from livestock prices. If AD is your route, the plan's numbers should be built around a feedstock supply agreement rather than a feed budget.

These three routes are not mutually exclusive, and the strongest plans blend them deliberately. A grower might graze the bulk of the crop with their own stock, sell a defined block standing to a neighbour to bring cash in early, and place any surplus with an AD operator to soak up a bumper year. Blending routes also smooths the risk that any single market softens - a dairy neighbour who over-winters fewer cattle one year, or an AD plant that switches feedstock mix. Worked Example - 30 ha out-wintering enterprise

A 30-hectare (74-acre) fodder beet block in the East of England yields 85 t/ha fresh, producing about 2,550 tonnes. Growing, lifting and sowing costs of roughly £1,545/ha put total production cost near £46,350 - about £18 per tonne. Grazed in situ by out-wintering cattle at around 45 dry cows per hectare, the crop displaces bought-in feed and grass silage worth 12 to 18p per kg DM. On roughly 18 t DM/ha of utilised feed, the avoided-feed value can exceed £2,600 per hectare - comfortably above the £1,545/ha cost even after allowing 15 to 25% field losses. Sold instead as a standing cash crop to a neighbouring dairy or an AD plant, the same field trades on a per-tonne or per-acre basis and typically returns a 9 to 20% net margin once lifting and haulage come out. Net margins across the crop land in the 9 to 32% band depending on route, yield and how much machinery is owned versus hired.

Where Mangold Is Grown at Scale

Geography changes the plan more than most first-time growers expect, because the same crop is a smallholder curiosity in one country and a mainstream winter-feed system in another. A plan that references the right regional playbook signals to a reader that you understand the crop's real commercial context.

New Zealand - the commercial heartland

New Zealand is where fodder beet became a mainstream enterprise. The national area peaked at around 65,000 hectares in 2015-16 and was still near 60,000 hectares sown in 2018-19, overwhelmingly for dairy wintering (DairyNZ). NZ operators routinely stock 40-plus dry cows per hectare on beet over winter, and the country's agronomy - transition protocols, allocation discipline, in-situ grazing systems - is the reference standard the rest of the world borrows from. If your plan is grazing-led, the NZ model is the one to cite.

United Kingdom & Ireland - the revival

Fodder beet is undergoing a revival across Britain and Ireland, driven by three separate forces: out-wintering sheep and young cattle, arable farmers growing it as a cash crop, and rising use as an AD feedstock. It performs best on free-draining arable land in the drier east and the mixed-farming west, with East Anglia, the Welsh Marches and the south-west all supporting commercial crops. United States & Canada - homestead to niche field crop

In North America, mangel-wurzel sits mostly in the homestead and small-mixed-farm space, where yields of 13 to 48 tons per acre make it an economical feed for cattle, pigs and poultry. Regional planning tip: match your DM percentage to your climate and system. Wetter climates and irrigation can lift yields by up to 30%, favouring softer grazing varieties; drier arable regions and lifted supply chains favour higher-DM storable types. Mangold is a food and feed crop, so the regulatory load is lighter than for, say, a licensed processor - but it is not zero, and the rules differ sharply by country. Mistakes That Sink a Beet Crop

Fodder beet rewards discipline and punishes shortcuts. Every one of the failures below shows up in real farm accounts, and a plan that pre-empts them reads as the work of someone who has actually thought the season through.

  • Rushing the transition. Acidosis peaks between day 7 and day 14 of introducing stock to beet. Animals must be stepped up by no more than about 1 kg DM every second day over a 14 to 21 day transition, with fibre offered at least three hours before the beet. Cows can eat 3 to 4 kg DM per hour when a fresh break opens, so a time-based allocation is dangerous - allocate by area, not by the clock.
  • Under-fertilising a hungry crop. Beet needs sodium and boron on top of nitrogen, phosphate and potash. Skimp on any of them and you cap both yield and root quality, which quietly destroys the cost-per-kg-DM number the whole business case depends on.
  • Weak early weed control. Beet is a slow, poor competitor at establishment. Without a planned pre- and post-emergence herbicide programme, weeds win the first six weeks and the crop never recovers its yield potential.
  • No storage or lifting plan. Beet is lifted late and clamped. Without cool, covered clamp storage at roughly 0 to 4°C and 90 to 95% humidity, roots rot before they are fed, and a good field becomes a write-off in the yard.
  • Costing the crop per acre instead of per kg DM. The whole business lives in the 5 to 6.5p per kg DM figure, not the headline tonnage. Growers who never convert to dry matter cannot tell a profitable field from a loss-making one.

Fodder Beet Glossary

The beet trade runs on jargon, and a plan that uses the terms correctly earns credibility fast. These are the words a lender, agronomist or buyer will expect you to know.

Dry matter (DM)
The non-water fraction of the crop, where all the feed energy lives. Fodder beet roots run roughly 12 to 21% DM depending on variety; everything in the business case is measured per kg of DM.
Cost per kg DM
The true unit cost of the feed - total growing cost divided by dry-matter yield. Fodder beet's headline advantage is a figure of 5 to 6.5p/kg DM.
Out-wintering
Keeping cattle or sheep outdoors on a crop through winter instead of housing them, cutting shed, bedding and silage costs. Beet is a leading out-wintering crop.
In-situ grazing
Leaving the crop in the ground and letting stock graze it directly behind a moved electric fence (a "break"), avoiding lifting and storage.
Clamp
An outdoor covered heap where lifted roots are stored over winter under straw at cool, humid conditions.
Acidosis
A rumen disorder from eating too much sugar or starch too fast - the main animal-health risk when introducing stock to beet, managed by slow transition.
Volatile solids (VS)
The organic fraction of a feedstock that an anaerobic digester converts to biogas; beet's methane yield is quoted per kg of VS.

The name comes from the German Mangold (leaf) and Wurzel (root). It is a relative of sugar beet and Swiss chard, grown mainly as livestock feed and increasingly as an anaerobic-digestion feedstock.
How much does it cost to start a mangold (fodder beet) farm?
A commercial mangold enterprise typically needs $60,000 to $280,000 in the US or £45,000 to £210,000 in the UK, covering land, ground preparation, seed and drilling, fertiliser and herbicide, harvesting or lifting, and storage. Growing, lifting and sowing costs run about £1,485 to £1,605 per hectare, or roughly £16 to £18 per tonne of fresh beet.
Is growing mangold profitable?
The business case rests on cost per kilogram of dry matter. Fodder beet can be produced for as little as 5 to 6.5p per kg DM, roughly a third to half the cost of grass silage and cheaper than kale at 8 to 10p per kg DM. Used as home-grown feed it replaces bought-in feed at 12 to 18p per kg DM, so the return comes from feed-cost avoidance rather than a sale price. Sold as a standing or lifted cash crop, net margins typically land between 9 and 20 percent.
How many tonnes of mangold can you grow per hectare?
Fodder beet is the highest-yielding forage crop grown in the UK, producing more than 80 tonnes per hectare of fresh weight and up to around 100 tonnes for the strongest varieties. In dry-matter terms, varieties such as Robbos and Blaze consistently yield more than 18 tonnes of dry matter per hectare. US homestead and field yields are commonly quoted at 13 to 48 tons per acre.
What livestock can you feed mangold to?
Mangold has been fed to cattle, sheep, pigs, horses and poultry for more than two centuries. Today it is used most heavily for out-wintering beef and dairy cattle and finishing sheep. Mature cattle are usually limited to 20 to 30 kg of fresh roots per day, and stock must be transitioned onto the crop over 14 to 21 days to avoid acidosis.
Can fodder beet be used for biogas?
Yes. Beet is a strong anaerobic-digestion feedstock, with a specific methane yield around 0.38 cubic metres per kg of volatile solids and a gross energy yield near 53 MWh per hectare for sugar and energy beet. Dedicated energy-beet varieties from breeders such as KWS are grown specifically to feed AD plants, giving mangold growers a second market alongside livestock feed.
How do you store mangold over winter?
Roots are lifted in autumn and clamped or pitted under straw in a cool, humid environment at about 0 to 4C and 90 to 95 percent relative humidity, where they keep for up to six months. In grazed systems the crop is left in the ground and strip-grazed in situ behind an electric fence, removing the lifting and storage cost entirely.
